Bear Down Barbecue & Catering Company owner Rashid Riggins sprinkles his secret pork rub onto a slab of St. Louis spare ribs ($23.25 for full slab, $12.25 for half) midway through its cooking process. James Sanchez/22nd Century Media
Riggins shows a smoke ring on one of the ribs after nearly six hours of a mixture of cherry and oak wood smoke permeating the meat.
The Power Sweeping Pulled Pork Sandwich ($7.25), which is smoked for 13 hours, is one of Riggins’ favorites on the menu and can be topped with his homemade cole slaw for a $1 upcharge.
